Foody Thursday – Cabbage Rolls – Holubtsi

I wanted to post this one for a long time, as cabbage rolls is one of the most known and loved Ukrainian foods. It might look like cooking cabbage rolls (Holubtsi in Ukrainian) is a complicated and time consuming process, but remember – logistics is the key. Carefully plan each activity and you will cut the time you spend on it tremendously.

Ready to Serve - Cabbage Rolls

Ingredients (I cook a large amount – 2 big pots, so you might want to cut the ingredients in half)

Stuffing:

Ground beef – 1 lb
Ground pork – 1 lbs
Rice – 2.5 cups uncooked
Carrots – 3 large
Onions – 2 large
Oil for cooking
Salt
Pepper

For wrapping:

2 medium size cabbage heads

For sauce:

1 cup sour cream
1 cup tomato sause
2 cups water
salt
pepper
dry parsley
majoran

Step 1: meat – unfreeze is frozen, skip this step is using fresh.
Cooking Rice
Step 2 – pre cook rice – make it al dente. I use basmati rice, for no specific reason. Just turn on the rice cooker, or multi-cooker in my case and carry on with other tasks.

Step 3 – remove the core from the cabbage head and set a large pot of water to boil

Step 4 – grate carrots

Step 5 – cube and fry onions with some sunflower oil. Oops, I burnt mine….

Step 6 – your pot of water must me boiling by now – so start separating your cabbage leaves and setting them aside to cool. Here is a little video on how I do mine – if I can do it with one hand, you can do it with both hands – EASY!

Step 7 – Mix all the ingredients for the stuffing – pre-cooked rice, ground beef and ground pork, grated carrots, caramelized onions, salt, pepper

Step 8 – Mix all the ingredients for the sauce – tomato sauce, sour cream, water, salt, pepper, majoran, dry parsley

Step 9  – mot exciting part – rolling up the rolls! I cut cabbage leaves in half and remove the thick central vein. Place your stuffing on one side and wrap a cabbage around it like an envelope. I should have done a short video for this as well but I needed both hands.

Step 10 – pour a bit of sauce (about half a cup) on the bottom of your slow cooker and start placing your rolls tightly. If you don't use a slow cooker, and will be cooking on a stow top – place a plate upside down to the bottom of your pot, cover with some spare cabbage leaves and add some water. This will prevent cabbage rolls from sticking to the bottom of the pot during cooking

Step 11 – as you place your cabbage rolls layer after layer, add more sauce, then pour the rest of the sauce on top. Thin with water if needed.

Step 12 – cover and cook for about 3 hours, check the level  of liquid frequently – this applies both to slowcooker and stove top cooking

Voila!!!!

Serve with sour cream! I added a drop of ketchup on top for some color! Enjoy!
